Ingredients
  

  • 2 cups cottage cheese full-fat, room temperature
  • 2 cups old-fashioned oats rolled oats
  • 1.5 cups fresh blueberries divided
  • 3 large eggs
  • 0.5 cup Greek yogurt plain, unsweetened
  • 0.25 cup honey or maple syrup
  • 2 teaspoons vanilla extract pure
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 teaspoon lemon zest optional

Instructions
 

  • Preheat your oven to 375°F. Grease your baking dish with butter or cooking spray. This prevents sticking and makes cleanup easier.
  • Combine cottage cheese, eggs, and Greek yogurt in your large bowl. Whisk until smooth and well blended. Small cottage cheese curds are fine.
  • Add honey, vanilla extract, and lemon zest to the wet ingredients. Stir until everything combines evenly throughout the mixture.
  • Mix in oats, baking powder, cinnamon, and salt. Fold gently until oats are fully coated. Let mixture sit for five minutes.
  • Fold in three-quarters of the blueberries. Save remaining berries for topping. Gentle folding prevents berries from breaking and turning everything purple.
  • Pour mixture into your prepared baking dish. Spread evenly with your spatula. Scatter reserved blueberries across the top for pretty presentation.
  • Bake for 35 to 40 minutes. The center should be set and edges golden brown. A toothpick inserted in the center comes out mostly clean.
  • Cool for 10 minutes before serving. The breakfast bake firms up as it cools. Slice into squares and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Freeze individual portions for up to 3 months. Prep the night before and bake fresh in the morning for easiest meal prep.
