Ingredients
  

Pasta Layer

  • 12 lasagna noodles regular or no-boil

Buffalo Chicken Layer

  • 3 cups cooked chicken shredded
  • 1 cup buffalo sauce

Cheese Layer

  • 15 oz ricotta cheese full-fat
  • 8 oz cream cheese softened
  • 3 cups mozzarella cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Ranch Twist & Garnish

  • 3/4 cup ranch dressing
  • 2 tablespoons fresh parsley chopped, for garnish
  • 1/4 cup blue cheese crumbles optional

Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit and lightly grease your baking dish with cooking spray.
  • Cook your lasagna noodles according to package directions if using regular noodles. Drain and lay flat on a clean towel.
  • Mix the shredded chicken with buffalo sauce in a medium bowl until every piece is coated.
  • Combine ricotta cheese, cream cheese, half the mozzarella, garlic powder, onion powder, salt, and pepper in a large bowl.
  • Spread a thin layer of the cheese mixture on the bottom of your prepared baking dish.
  • Layer three to four lasagna noodles over the cheese, slightly overlapping them.
  • Spread half of the buffalo chicken mixture over the noodles evenly.
  • Add a layer of the ricotta cheese mixture, spreading it to cover the chicken.
  • Drizzle ranch dressing over the cheese layer in a zigzag pattern.
  • Repeat the layering process: noodles, remaining chicken, cheese mixture, and ranch drizzle.
  • Top with remaining noodles and spread the rest of the cheese mixture over them.
  • Sprinkle the remaining mozzarella cheese generously over the top layer.
  • Cover the dish tightly with aluminum foil, making sure it doesn't touch the cheese.
  • Bake covered for thirty minutes to heat everything through and melt the cheese.
  • Remove the foil and bake for another fifteen minutes until the cheese turns golden and bubbly.
  • Let the lasagna rest for ten to fifteen minutes before cutting to help the layers set.
  • Drizzle extra ranch dressing over the top and garnish with fresh parsley before serving.

Notes

Store leftovers covered in the refrigerator for up to four days. Reheat individual portions in the microwave or reheat the entire dish covered in a 350-degree oven. This lasagna freezes well for up to three months when wrapped tightly.
