2lbsBoneless chicken breasts or thighsfresh or frozen
4cupsBroccoli floretsfresh or frozen
1canCream of mushroom soup10.5 oz
1/2cupMayonnaisefull-fat preferred
2cupsSharp cheddar cheeseshredded, divided
1tspGarlic powder
1tspOnion powder
1tspSaltto taste
1/2tspBlack pepperto taste
1tbspLemon juice
1/4cupChicken brothoptional for thinning
Instructions
Spray your slow cooker insert with cooking spray to prevent sticking and make cleanup easier.
Place chicken breasts or thighs in the bottom of your slow cooker in a single layer if possible.
Season the chicken with salt, black pepper, garlic powder, and onion powder on both sides.
Arrange broccoli florets on top of and around the chicken pieces evenly throughout the pot.
Mix cream of mushroom soup, mayonnaise, lemon juice, and half of the shredded cheese in a bowl.
Pour the creamy mixture over the chicken and broccoli, spreading it to coat everything evenly.
Add chicken broth around the edges if the sauce seems too thick or you want extra moisture.
Cover the slow cooker with the lid and cook on low for 4 to 6 hours or high for 2 to 3 hours.
Check that chicken reaches 165 degrees internally and shreds easily when done cooking.
Sprinkle remaining cheese over the top during the last 30 minutes of cooking time.
Let the dish rest for 10 minutes after turning off the heat before serving to let flavors settle.
Notes
This recipe works well with both chicken breasts and thighs. Thighs stay moister during long cooking. Add broccoli halfway through if you prefer firmer vegetables. Shred your own cheese for the smoothest sauce.
