Ingredients
  

  • 1 cup cottage cheese full-fat recommended
  • 1 1/2 cups all-purpose flour
  • 3/4 cup chocolate chips semi-sweet or dark
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon optional

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • Blend cottage cheese in your mixing bowl until mostly smooth using a fork or whisk.
  • Add egg, honey, and vanilla extract to the cottage cheese and stir until combined.
  • Mix flour, baking powder, salt, and cinnamon in the same bowl.
  • Fold in chocolate chips until evenly distributed throughout the batter.
  • Scoop tablespoon-sized portions onto your prepared baking sheet, spacing them two inches apart.
  • Flatten each cookie slightly with the back of your spoon or palm.
  • Bake for 12 to 15 minutes until edges turn golden brown.
  • Let cookies cool on the baking sheet for five minutes before transferring to a cooling rack.
  • Allow cookies to cool completely before storing or serving.

Notes

Store in an airtight container for up to 3 days at room temperature or 1 week refrigerated. Freeze for up to 3 months. Use full-fat cottage cheese for best texture.
